About the event

If you've considered distilling as a way to expand your current brewing business, this 1.5 hour introductory seminar is a must for you. You will acquire an introductory understanding of how to leverage your current brewing skill set and expand your bottom line with the addition of distilling. As a follow up to this introductory seminar, there will be a 3 day immersive seminar Professional Distilling Essentials, May 16-18th also at White Labs, Inc. coinciding with Asheville Beer Week. Early Bird registration for the May seminar will kick off during this intro seminar.

Head Lecturer

Kevin Smith, Director of Brewing & Distilling at Company Distilling

Kevin Smith is obsessed with the traditional processes of making and fermenting distilled beverages. He publishes about it in leading science texts, lectures about it in the most respected programs, and has even pioneered new analytical processes to accomplish it. A self-admitted science geek at the forefront of his field, Kevin comes to Company following 22 years with Jack Daniels and owner Brown-Forman. Not only an expert in the art of spirits production, Kevin is a highly accomplished, professional brewer.

Topics discussed will be:

  • Why brewers make great distillers. Why they are technically well positions to jump into the distilled spirits and the business.
  • The traditional aspects of distilling, namely the definitions of “craft“ and “tradition“ in the context of distilled spirits production, focusing on a definition of both of those terms on an applied and practical level.
